Rabba’s Vegan Chili

1 can chickpeas
1 can red kidney beans
1 can white kidney beans
1 white onion, chopped
1 zucchini, chopped
1 jalapeno, chopped
6 plum tomatoes, chopped
1 cup of frozen corn kernels
2 cups vegetable broth
1 tbs minced garlic
1/2 tsp chili powder
1/2 tsp dry mustard

  1. Saute onions, zucchini, jalapeno and garlic in a large pot until soft.
  2. Add beans, broth, tomatoes and spices and bring to a boil.
  3. Add corn. Turn down the heat and simmer for 1 hour.
  4. Serve hot!
