Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream (adjust for desired creaminess)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional, for garnish)
  • Chopped green onions or parsley (optional, for garnish)

Instructions

  • Preheat your oven to 400°F (200°C). Spread the diced potatoes on a baking sheet and drizzle with olive oil. Toss them to coat evenly, then roast for 25-30 minutes, or until they are golden brown and tender, flipping halfway through.
  • While the potatoes are roasting, heat a large pot over medium heat. Add a splash of olive oil and sauté the onion until softened, about 5 minutes. Add the garlic and cook for another 1 minute, until fragrant.
  • Once the potatoes are roasted, add them to the pot with the onions and garlic. Pour in the broth and bring the mixture to a simmer. Cook for an additional 10 minutes, allowing the flavors to blend.
  • Use an immersion blender to carefully blend the soup until smooth and creamy. If you prefer a chunkier texture, blend only half of the soup and leave some potato chunks. Alternatively, you can transfer the soup in batches to a regular blender.
  • Stir in the milk or cream to reach your desired level of creaminess. Season with thyme, salt, and pepper to taste. Allow the soup to simmer for a few more minutes to thicken.
  • Ladle the soup into bowls and garnish with shredded cheddar cheese and chopped green onions or parsley if desired. Serve warm with crusty bread for dipping.

This Roasted Potato Soup is a simple yet satisfying dish that’s perfect for chilly evenings or as a side to your main meal. The roasted potatoes give it a rich, earthy flavor, while the creamy broth makes it a comforting classic. Whether you enjoy it as a quick lunch or a family dinner, this hearty soup is sure to become a staple in your kitchen!
