Pumpkin Carrot Soup

Ingredients:

  • 4 cups peeled, cubed pumpkin

  • 3 carrots, peeled and cubed

  • 1 large white onion, chopped

  • 2 cups vegetable broth

  • 1 cup sour cream

  • 1/4 cup olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat.

  2. Add pumpkin, carrots, and onion. Sauté for 15 minutes until softened.

  3. Pour in vegetable broth and let simmer for 20 minutes.

  4. Blend the mixture until smooth using a blender or immersion blender.

  5. Serve warm, topped with a spoonful of sour cream.
