Hanukkah Potato Latkes

Ingredients:
- 8 peeled yellow potatoes.
- 2 peeled onions.
- 3 eggs.
- 1 tsp of salt.
- 1/2 cup of all-purpose flour
- 1 cup of canola or vegetable oil
- 1 /4 cup of green onions
- Blend potatoes and onions in a food processor until beaten into a pulpy mixture.
- Beat the eggs and salt, mix into the potato mixture.
- Add the flour and mix.
- Heat the oil in a frying pan until sizzling.
- Form small pancakes with the potato and cook in oil until they are golden brown. Repeat until all dough has been used.
- Garnish with green onions and serve hot!
