Hanukkah Potato Latkes


  • 8 peeled yellow potatoes.
  • 2 peeled onions.
  • 3 eggs.
  • 1 tsp of salt.
  • 1/2 cup of all-purpose flour
  • 1 cup of canola or vegetable oil
  • 1 /4 cup of green onions
  1. Blend potatoes and onions in a food processor until beaten into a pulpy mixture.
  2. Beat the eggs and salt, mix into the potato mixture.
  3. Add the flour and mix.
  4. Heat the oil in a frying pan until sizzling.
  5. Form small pancakes with the potato and cook in oil until they are golden brown. Repeat until all dough has been used.
  6. Garnish with green onions and serve hot!
