Easy Summer Pasta Salad

Ingredients for Pasta Salad:

  • Your favorite pasta noodle shape
  • Cherry tomatoes (or any other non-threatening veggie)
  • Mozzarella cheese balls
  • Spicy salami (choose a good one)
  • Black olives or Kalamata olives
  • Pepperoncini (optional, but adds a kick)
  • Red onion
  • Parsley

Recipe for Pasta Salad:

  1. Cook your favorite pasta noodle shape according to the package instructions. Drain and rinse with cold water to cool it down.
  2. Slice the cherry tomatoes in half and set aside. If you prefer a different vegetable, prepare it in a suitable manner (e.g., chop, dice, or slice).
  3. Drain the mozzarella cheese balls and cut them into bite-sized pieces.
  4. Cut the spicy salami into thin slices or bite-sized chunks.
  5. Pit and slice the black olives or Kalamata olives.
  6. If desired, slice the pepperoncini into rings for an added zing.
  7. Finely dice the red onion and chop the parsley.
  8. In a large bowl, combine the cooked pasta, cherry tomatoes (or alternative vegetable), mozzarella cheese balls, salami, olives, pepperoncini (if using), red onion, and parsley.
  9. Toss all the ingredients together gently until well mixed.
  10. Serve immediately or refrigerate for a few hours to allow the flavors to meld together.
