Berry Breakfast Bar

Start your summer day with a burst of flavour! These easy-to-make breakfast bars are packed with goodness and are perfect for a grab-and-go morning. All ingredients are readily available at Rabba.

Bake time: 25-30 minutes

Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries – fresh or defrosted (or choose one like we did – blueberries are a great choice!)
  • 1/4 cup berry jam

Instructions

  1. Preheat your oven to 375°F. Lightly grease and flour an 8×8 inch baking pan.
  2. In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, and salt.
  3. Pour in the melted butter and vanilla extract. Mix with a fork until crumbly and well combined.
  4. Press about two-thirds of the oat mixture evenly into the bottom of the prepared baking pan. This will form your base.
  5. In a separate small bowl, gently mix the mixed berries with the berry jam until the berries are coated.
  6. Spread the berry mixture evenly over the pressed oat base in the pan.
  7. Crumble the remaining one-third of the oat mixture over the berry layer.
  8. Bake for 25-30 minutes, or until the topping is golden brown and the edges are lightly bubbling.
  9. Let the bars cool completely in the pan on a wire rack before slicing. This helps them set properly.
  10. Once cooled, cut into bars and enjoy your delicious summer breakfast!
