Start your summer day with a burst of flavour! These easy-to-make breakfast bars are packed with goodness and are perfect for a grab-and-go morning. All ingredients are readily available at Rabba.

Ingredients
- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup mixed berries – fresh or defrosted (or choose one like we did – blueberries are a great choice!)
- 1/4 cup berry jam
Instructions
- Preheat your oven to 375°F. Lightly grease and flour an 8×8 inch baking pan.
- In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, and salt.
- Pour in the melted butter and vanilla extract. Mix with a fork until crumbly and well combined.
- Press about two-thirds of the oat mixture evenly into the bottom of the prepared baking pan. This will form your base.
- In a separate small bowl, gently mix the mixed berries with the berry jam until the berries are coated.
- Spread the berry mixture evenly over the pressed oat base in the pan.
- Crumble the remaining one-third of the oat mixture over the berry layer.
- Bake for 25-30 minutes, or until the topping is golden brown and the edges are lightly bubbling.
- Let the bars cool completely in the pan on a wire rack before slicing. This helps them set properly.
- Once cooled, cut into bars and enjoy your delicious summer breakfast!
