Yummy Grilled Mediterranean Chicken Kabobs

Marinated Grilled Chicken Kabobs with Mediterranean Spice Blend

Ingredients:

  • 1.5 lbs chicken breast, boneless and skinless, cut into 1-inch cubes
  • 2 bell peppers, any color, cut into 1-inch pieces
  • 1 large onion, cut into 1-inch pieces
  • 2 cloves of garlic, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the minced garlic, lemon juice, olive oil, paprika, cumin, cinnamon, salt, and pepper. Stir well to create the marinade.
  2. Add the chicken breast cubes to the marinade and toss to coat them evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for better flavor.
  3. Preheat the grill to medium-high heat.
  4. Assemble the kabobs by threading the marinated chicken cubes, bell pepper pieces, and onion pieces alternately onto skewers. Repeat until all ingredients are used.
  5. Place the kabobs on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred and tender.
  6. Remove the kabobs from the grill and let them rest for a few minutes before serving.
  7. Serve the marinated grilled chicken kabobs hot with a side of rice, salad, or pita bread.

Note: You can customize this recipe by adding other vegetables like cherry tomatoes, zucchini, or mushrooms to the kabobs according to your preference. Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for safe consumption.
