Wild Rice & Chicken Soup

Ingredients
- 4 tbs butter
- 3 celery stalks, chopped into 1/2 inch pieces
- 2 carrots, chopped into 1/2 inch pieces
- 1 onion, chopped
- 2 garlic cloves, minced
- 1/4 cup of all-purpose flour
- 1 cup of wild rice
- 2 cups of chopped roasted chicken
- 2 cups of water
- 6 cups of chicken broth
- 1 cup of heavy cream
- In a saucepan, melt the butter with the celery, onion, carrots, and garlic cooking for ten minutes on medium heat.
- Sprinkle the flour on top, stirring, for another 3 minutes.
- Add the rice and gradually stir in the stock and water. Cook for 30 minutes.
- Add the chicken and simmer for 10-15 minutes longer.
- Stir in the cream and serve with salt and pepper to taste!
