Wild Rice & Chicken Soup

Ingredients

  • 4 tbs butter
  • 3 celery stalks, chopped into 1/2 inch pieces
  • 2 carrots, chopped into 1/2 inch pieces
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/4 cup of all-purpose flour
  • 1 cup of wild rice
  • 2 cups of chopped roasted chicken
  • 2 cups of water
  • 6 cups of chicken broth
  • 1 cup of heavy cream
  1. In a saucepan, melt the butter with the celery, onion, carrots, and garlic cooking for ten minutes on medium heat.
  2. Sprinkle the flour on top, stirring, for another 3 minutes.
  3. Add the rice and gradually stir in the stock and water. Cook for 30 minutes.
  4. Add the chicken and simmer for 10-15 minutes longer.
  5. Stir in the cream and serve with salt and pepper to taste!
