Roasted Brussels sprouts are a simple yet delicious way to enjoy this nutritious vegetable. With just a few ingredients and minimal prep, you can transform Brussels sprouts into a crispy, golden-brown side dish that’s packed with flavour. Whether you’re serving them alongside a holiday meal or as a weeknight dinner companion, this recipe is sure to win over even the pickiest eaters.

Ingredients:

  • 1 lb (about 450g) Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 slices bacon, cooked and crumbled (optional)

Instructions:

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • Wash the Brussels sprouts under cold water, then trim off the stems and remove any yellow or damaged outer leaves. Cut each sprout in half lengthwise.
  • In a large mixing bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until they are evenly coated. Mix the garlic, balsamic vinegar, and bacon in at this stage.
  • Spread the Brussels sprouts in a single layer on the prepared baking sheet, with the cut sides facing down. This helps them get nicely browned and crispy.
  • Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the Brussels sprouts are golden brown and crispy on the edges. Halfway through, stir them or shake the pan to ensure even cooking.
  • If you’re adding Parmesan cheese, sprinkle it over the Brussels sprouts during the last 5 minutes of roasting.
  • Once roasted to your desired crispiness, remove the Brussels sprouts from the oven. Transfer to a serving dish, and enjoy them hot. They’re perfect as a side dish to any fall meal!

Tips:

For extra flavour, try drizzling the roasted Brussels sprouts with a little extra balsamic vinegar before serving. You can also add a sprinkle of crushed red pepper flakes for a bit of heat.

With their perfect balance of crispiness and tenderness, these roasted Brussels sprouts are a crowd-pleaser every time. Whether you stick to the classic version or add your own twist with ingredients like garlic, balsamic vinegar, or Parmesan, this versatile dish is bound to become a staple in your fall recipe rotation. Serve them hot and enjoy the wonderful, earthy flavours that only roasting can bring out.
