Ingredients:

  • 1 lb (450g) Italian sausage (bulk or sliced, depending on your preference)
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cups (300g) butternut squash, peeled and cubed
  • 2 cups (300g) sweet potatoes, peeled and cubed
  • 2 cups (200g) brussels sprouts, trimmed and halved
  • 1 red bell pepper, diced
  • 1 cup (150g) frozen or fresh green beans
  • 1 cup (240ml) chicken or vegetable broth
  • 1/2 cup (120ml) heavy cream
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • 1 cup (100g) shredded cheddar cheese
  • 1/2 cup (60g) croutons (or bread crumbs)
  • 2 tbsp olive oil

Instructions:

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the Italian sausage until browned and cooked through, breaking it into crumbles as it cooks. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  • Add the butternut squash, sweet potatoes, brussels sprouts, red bell pepper, and green beans to the skillet. Cook for about 10 minutes, stirring occasionally, until the vegetables are slightly tender.
  • Return the cooked sausage to the skillet with the vegetables. Pour in the chicken or vegetable broth and heavy cream. Stir in the dried thyme, rosemary, salt, and pepper. Cook for an additional 5 minutes, allowing the mixture to heat through and the flavors to combine.
  • Transfer the sausage and vegetable mixture to a 9×13-inch (23×33 cm) baking dish, spreading it out evenly.
  • Sprinkle the shredded cheddar cheese evenly over the top of the casserole. In a small bowl, mix the croutons with olive oil and sprinkle this mixture over the cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the vegetables are tender. If needed, broil for an additional 2-3 minutes to get a crispy, golden topping.
  • Let the casserole cool for a few minutes before serving. Enjoy this comforting dish as a satisfying main course or a delicious side.

Bonus Tips:

Feel free to customize the vegetables based on what you have on hand or your personal preferences.

For a vegetarian version, omit the sausage and add extra beans or tofu for protein.
