Mom’s Beef Stew


  • 2 tbsp vegetable oil
  • 1 lb beef stew meat, cut in bite-size pieces
  • 1 /4 tsp salt
  • 2 cups of chopped potatoes
  • 2 cups of carrots, celery and onions, chopped
  • 4 cups of low sodium beef broth
  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the meat and salt, cooking for 5 minutes until meat is brown.
  3. Remove the meat. Add vegetables to the pan and brown for 5 minutes.
  4. Add meat, vegetables and broth to a large pot and bring to a boil.
  5. Reduce heat, simmer for 30 minutes.
  6. Serve with a tablespoon of cream. (optional)
