Mom’s Beef Stew

Ingredients:
- 2 tbsp vegetable oil
- 1 lb beef stew meat, cut in bite-size pieces
- 1 /4 tsp salt
- 2 cups of chopped potatoes
- 2 cups of carrots, celery and onions, chopped
- 4 cups of low sodium beef broth
- Heat the oil in a large skillet over medium-high heat.
- Add the meat and salt, cooking for 5 minutes until meat is brown.
- Remove the meat. Add vegetables to the pan and brown for 5 minutes.
- Add meat, vegetables and broth to a large pot and bring to a boil.
- Reduce heat, simmer for 30 minutes.
- Serve with a tablespoon of cream. (optional)
