Mexican Quinoa

Ingredients:

  • 1 /4 cup chopped red onion
  • 1 /2 cup chopped tomatoes
  • 1 /2 cup of frozen corn
  • 1 cup of canned black beans, drained & rinsed
  • 1 tbs of butter or vegetable oil
  • 1 cup of quinoa
  • 2 cups of water
  1. Bring water and quinoa to a boil in a pot. Reduce to medium heat, cover and simmer until quinoa is water is absorbed.
  2. Sauté the vegetables and beans in oil or butter
  3. Stir mixture into the quinoa
  4. Add salt and pepper to taste and serve hot!
