Mexican Quinoa

Ingredients:
- 1 /4 cup chopped red onion
- 1 /2 cup chopped tomatoes
- 1 /2 cup of frozen corn
- 1 cup of canned black beans, drained & rinsed
- 1 tbs of butter or vegetable oil
- 1 cup of quinoa
- 2 cups of water
- Bring water and quinoa to a boil in a pot. Reduce to medium heat, cover and simmer until quinoa is water is absorbed.
- Sauté the vegetables and beans in oil or butter
- Stir mixture into the quinoa
- Add salt and pepper to taste and serve hot!
