Creamy Pumpkin Risotto

Instructions:

  • In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes, stirring frequently.
  • Stir in the Arborio rice, making sure it’s evenly coated with the oil. Cook for 2-3 minutes, allowing the rice to toast slightly.

  • Once the rice is almost fully cooked, stir in the pumpkin purée and thyme. Cook for another 5 minutes, letting the flavors meld together.
  • Remove the risotto from the heat and stir in the butter and grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
