Ingredients:
- 300g spaghetti (We used Italpasta)
- 2 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- 2 cups sliced mushrooms (We used crimini)
- 1/2 tsp chili flakes (optional)
- 1/2 cup vegetable broth
- 1/2 cup cooking cream
- 1/4 cup grated parmesan (or plant-based alternative)
- Salt and pepper to taste
- Fresh parsley, chopped
Directions:
- Cook pasta according to package instructions. Reserve 1/4 cup of pasta water.
- In a pan, heat olive oil and butter over medium heat. Add garlic and mushrooms. Cook until browned.
- Stir in chili flakes, broth, and cream. Simmer for 3–4 minutes.
- Add pasta, reserved water, parmesan, salt and pepper. Toss until creamy.
Garnish with parsley. Serve warm.
