Creamy Garlic Mushroom Pasta

Ingredients:

  • 300g spaghetti (We used Italpasta)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 2 cups sliced mushrooms (We used crimini)
  • 1/2 tsp chili flakes (optional)
  • 1/2 cup vegetable broth
  • 1/2 cup cooking cream
  • 1/4 cup grated parmesan (or plant-based alternative)
  • Salt and pepper to taste
  • Fresh parsley, chopped

Directions:

  1. Cook pasta according to package instructions. Reserve 1/4 cup of pasta water.
  2. In a pan, heat olive oil and butter over medium heat. Add garlic and mushrooms. Cook until browned.
  3. Stir in chili flakes, broth, and cream. Simmer for 3–4 minutes.
  4. Add pasta, reserved water, parmesan, salt and pepper. Toss until creamy.
    Garnish with parsley. Serve warm.
