Kheer Rice Pudding
Ingredients
- 2 cups of coconut milk
- 2 cups of 2% milk
- 2 tbs of white sugar
- 1 /2 cup of basmati rice
- 1 /2 cup of trail mix
- 1 /4 cup of raisins
- 1 /2 tsp of ground cardamom
- Bring the coconut milk, 2% milk and sugar to a boil in a large saucepan.
- Add basmati rice and simmer over low heat until mixture thickens and rice is tender (20 minutes).
- Stir in cardamom and trail mix.
- Cook for 3-4 more minutes.
- Ladle into serving bowls and garnish with raisins
