Kheer Rice Pudding

Ingredients

  • 2 cups of coconut milk
  • 2 cups of 2% milk
  • 2 tbs of white sugar
  • 1 /2 cup of basmati rice
  • 1 /2 cup of trail mix
  • 1 /4 cup of raisins
  • 1 /2 tsp of ground cardamom
  1. Bring the coconut milk, 2% milk and sugar to a boil in a large saucepan.
  2. Add basmati rice and simmer over low heat until mixture thickens and rice is tender (20 minutes).
  3. Stir in cardamom and trail mix.
  4. Cook for 3-4 more minutes.
  5. Ladle into serving bowls and garnish with raisins
