Classic Pumpkin Pie

- 3/4 cup (150g) granulated sugar
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 2 large eggs
- 1 cup (240ml) heavy cream
- 1/2 cup (120ml) whole milk
Instructions:
- Preheat your oven to 425°F (220°C).
- Roll out your pie crust and fit it into a 9-inch pie dish. Trim and crimp the edges as desired. Place the pie crust in the refrigerator while you prepare the filling.
- In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, salt, cinnamon, ginger, and cloves until well combined. Add the eggs, beating well after each addition. Stir in the heavy cream and milk until the mixture is smooth and fully incorporated.
- Pour the pumpkin filling into the prepared pie crust, spreading it evenly.
- Bake the pie at 425°F (220°C) for 15 minutes. Then, reduce the oven temperature to 350°F (175°C) and continue baking for an additional 35-40 minutes, or until the filling is set and a knife inserted into the center comes out clean. If the crust starts to brown too quickly, cover the edges with foil to prevent burning.
- Allow the pie to cool on a wire rack for at least 2 hours before serving. This allows the filling to set properly. Serve with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
