Chickpea and Spinach Stew

So you’re done with the holiday indulgence…

In January, you might want to focus on recipes that are comforting, nourishing, and maybe even a bit lighter after the indulgences of the holiday season. Enjoy our newest recipe; Chickpea and Spinach Stew. This meal is diverse and incorporates seasonal ingredients to help you stay warm and healthy during the winter months!


  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 bag (10 oz) fresh spinach, washed and chopped
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh lemon wedges for serving



Prepare the Ingredients

  • Rinse and drain the chickpeas.
  • Finely chop the onion and mince the garlic.
  • Wash and chop the fresh spinach.

Sauté Onions and Garlic

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the chopped onions and sauté until softened, about 3-4 minutes.
  • Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add Spices

  • Stir in the ground cumin, ground coriander, smoked paprika, salt, and black pepper. Cook for another minute to toast the spices.

Add Chickpeas and Tomatoes

  • Add the drained chickpeas to the pot and coat them with the onion and spice mixture.
  • Pour in the diced tomatoes with their juice. Stir well to combine.


  • Pour in the vegetable broth and bring the stew to a gentle simmer. Allow it to cook for about 15-20 minutes, allowing the flavors to meld.

Add Spinach

  • Once the stew has simmered and the chickpeas are tender, stir in the chopped spinach.
  • Cook for an additional 2-3 minutes, just until the spinach wilts.

Adjust Seasoning

  • Taste the stew and adjust the seasoning as needed. Add more salt, pepper, or spices according to your preference.


  • Ladle the chickpea and spinach stew into bowls.
  • Serve with a wedge of fresh lemon on the side for a burst of citrus flavor.
