You’re not wrong to hesitate. The outer layer of lemons, limes and oranges holds a lot of flavor and with one simple extra step it can become something you’ll actually reach for again and again.

Here’s how to transform those extra peels into a versatile, long-lasting flavour boost.

1. The Core Technique: Dry Until Completely Crisp

The key to a smooth and usable powder is by removing all the moisture. This step will make sure that your citrus powder stores well without any clumping over time. 

Prep is essential (Focus on the Peel):
Use the peels from lemons, lime, or oranges and try to remove any excess white pith as it can add a bitterness to it. If you prefer a more mild flavour we suggest briefly boiling the peels then drain and pat till completely dry. 

The Drying Process:
Lay the peels flat on a baking sheet. Dry them in a dehydrator but if you don’t have one don’t worry you can use your oven by turning it on at the lowest setting which is usually around 150°F or 66°C and make sure you keep them in a single layer so they dry out evenly. 

The “Snap Test”:
The peels will be completely ready when they feel completely dry and snap easily. Any remaining moisture will affect the texture bending instead of snapping which will cause clumping when you try to turn it into powder and affect the shelf life of your powder.

2. Turning Peels Into Powder

Once your peels are fully dried they are ready to be transformed!

Cool Completely: Let your peels cool down to room temperature before you start to grind them.

The Grinding Tool: You will need to use either a spice grinder, coffee grinder, or a blender to achieve a fine texture which is what we are looking for. 

Pulse for Best Results: Make sure you grind in short bursts to keep the power light so that you prevent clumping and store in an airtight container to keep the flavour fresh.
