Ingredients

Instructions

  • In a large bowl, whisk together soy sauce, pineapple juice, olive oil, honey, rice vinegar, minced garlic, grated ginger, crushed red pepper flakes (if using), salt, and black pepper.
  • Add the chicken cubes to the marinade, ensuring all pieces are well-coated.
  • Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for best flavour.
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • Preheat your grill to medium-high heat.
  • Thread the marinated chicken, pineapple chunks, bell pepper pieces, and red onion pieces onto the skewers, alternating ingredients for a colourful and even distribution.
  • Place the skewers on the preheated grill.
  • Grill for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (75°C).
